Don't forget about your local LIBRARY!

So everytime we move my kids always beg me to take them to the local library to get library cards.  With it being Spring Break this was our first chance to get over that way.  After being stuck sick in the house all week I decided that maybe we could get over there and check it out today.

Each Library is different so I was excited to see what ours had to offer.  The youth/kids area was awesome....next time I will take a pic!  Super cute and kid friendly!  Lots of movies and books plus monthly activities for all ages.  Today they were doing cup stacking but I was still feeling bad and Kendra had a slight fever so we passed on that.  We did however score 3 books per child, 2 movies, 2 wii games, and I got 5 magazines (the limit was 50....really 50).  The best part about it is that it's totally FREE!  The Hoover, AL Library even has DS and 3DS games to check out (ours did not).

You should totally check out your local library!  They have such cool things that don't cost you a thing...unless however you return them late!

Organic Ville Sesame and Teriyaki Sauce & Marinade

Today I was at Publix and saw this great looking selection of dressings, sauces, etc at Publix.  It seems our Publix keeps adding tons of organic, gluten free products each week.  I had no idea as to what we were having for dinner but after I saw this sauce I knew right away it was going to be stir fry night!  Oh yeah! 

I also saw that Publix has fresh sliced, chopped veggies for stir fry all ready and packaged for you near the fruit and salad area just for stir fry which sounded perfect to me!  I used top round steak also.

I would give this sauce a 10!  It was delish!  Perfect dinner which was quick and easy!

Flatbread Pizza with shredded boston butt, red onion, and bell pepper

Tonight I made a flat bread pizza with flat out bread that was very similar to an entree Justin ordered at a place last week.  I already had everything on hand so it was super easy and fast to make!

flat out bread
pizza sauce
mozzerella cheese
bell peppers
red onion
seasonings (Italian, garlic, parmesan cheese)

I placed some pizza sauce over the flat out bread and sprinkled garlic salt, italian seasoning, and some parmesan cheese over it.

Next just add your toppings! And bake for 10 minutes at 350 degree's.

Boston Butt over shredded Cabbage!

This morning I put a boston butt in the crock pot before heading out the door for work.  When I got home it was done!

I then shredded it and stuck in back in the crock pot until later when Justin got home.

I served mine over shredded cabbage which was left over from last night's soup!  Enjoy!

Taco Tuesday!

Tonight was Taco night.....a fav in our house!  I usually make the kids a seperate skillet of beef as they do not care for onions, peppers, etc in their beef.  It usually makes enough for one more additional night during the week which is great since I am working all month!  I did use the El Paso dinner kit and I used the seasoning it came with for the kids beef.  I used a paleo recipe I found online for ours which def does not taste the same but it works!

                                 I cook our beef with bell peppers, red onion, and green onion.

Taco Seasoning Recipe:

2 T chili powder
1-1/2 T cumin
1-1/2 T paprika
1 T onion powder
1 T garlic powder
2 tsp oregano (which I left out of the picture :/)
1/2 tsp red pepper flakes (I used crushed red pepper since I did not have red pepper flakes)

Taste it and add more seasoning...this recipe did not do it for me as far as taste...so taste and keep adding!

I made a taco salad.....bed of lettuce, beef, tomato's, jalepeno's, extra fresh onion, and topped with avocado and salsa(Publix has the best organic green wise salsa)....  Enjoy!
