Monday Meals.....

So here are a few meals I ate today...............this certainly is not everything I ate, ha!!!!!!!

 Breakfast was organic cage free eggs, mushrooms, peppers, tomatoes, onions, and garlic salt
Lunch was Fit Life Fire Cracker Shrimp (I added salmon from last nights dinner)

 Dinner was Paleo Pepper Steak..so easy and delish!

Sunday Dinner...Salmon and Salad

Here is what we had for dinner on Sunday.  



Green salad with cherry tomatoes, banana peppers, and feta cheese 
Salmon (from Sam's Club) with Organicville Organic Sesame Teriyaki marinade (Publix) over steamed whole grain rice (Publix frozen rice)  with almonds (I added sliced almonds to the rice).

Easy and delish!

Meals for the week....

I have always had a Sams' Club membership and have rarely used it since moving here.  Anything 5+ miles or more away I rarely frequent.  So this week I was off Friday and decided to hit Sam's to get my meats and milk.  The prices were good!

I bought lean ground beef $3.18 lb
Salmon fillet $7.99 lb
Chicken Breast $1.79 lb
1 gallon 1% milk $3.48

I spent $47.40

This week Dillard's had their clearance an extra 30% off.  Usually I don't shop the 30% ( I wait for 40%-50%) but when I browsed I found some great deals for my son (school clothes).

Simple Roast

Tonight's dinner was simple and easy!

Roast
Baby Carrots
Sliced  Sweet Pot's
Trader Joe's Free Range Chicken Broth (2-3 cups)
Salt & Pepper
Publix brand bag of whole grain steamed rice in frozen section

Throw everything but the rice in the crockpot.  Salt and pepper everything.  Cook on low for 6 hours.
Heat up the rice in the mircowave and enjoy!

A few of my favorite things this week


Here are some of my favorite things this week!!!  

First off is this lettuce.  I get it at ALDI and it's $2.99.  It comes with 4 small heads of lettuce, 3 different kinds.  It's very fresh and crisp!!!





Next is Joseph's Flat bread.  It was BOGO at Publix and I make flat bread pizza and sandwiches with it.

5-Minute Prep Crispy Honey Pork Tenderloin

This was super easy and delish!!!!!!

Ingredients
  • 1 pork tenderloin, about 1.5 to 2 pounds
  • ½ cup honey (preferably raw)
  • couple teaspoons of garlic powder
  • couple teaspoons of salt
Instructions
  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with aluminum foil.
  3. Baste the tenderloin generously with honey, then sprinkle with the garlic powder and salt.
  4. Bake in oven for about 15 minutes, then lower the oven rack and turn the broiler on.
  5. Broil for about 10 minutes, until juices run clear.
  6. Let sit for about 5 minutes before carving.
  7. Note: if your tenderloin is bigger, adjust the cooking time accordingly.
