Easy Kids Lunch

These are very easy and quick to make.  You could fill the cresent roll with anything really and it would work!  I used ham and cheese today.




Earth Fare Deals

This week Earth Fare sent out coupons for $2 seedless whole watermelons!  Great deal.  I decided to pick mine up today and got a text a few min prior that if I spent $5 I could get organic baked beans for FREE!  So I got my watermelon for $2, tried some YUMMY new chips for $2 and got a bar for $1.  These chips are good!  They are Late July Organic, Gluten Free Mild Green Mojo!  Delish! 
Serving = 13 chips, 4.5 g fat, 110 cal!  A must try!
Also 10% of all Late July Chip sales go to Summer Camp Scholarships!

Fish Taco's

Tonight I made fish taco's with fresh Mahi Mahi thanks to our Uncle Ken in PC who caught it!  I used just about everything I could think of as fillers/toppings as I went through the fridge......
I used...
shredded lettuce
diced tomatoes/red onions
green onion
cilantro
jalepeno's
acovado's
lime to squeeze on top of taco

I used flour tortilla's although you could eat these in lettuce wraps.  They were delish and tasted so fresh!

Publix deals

Today I went to Publix with a few coupons.  Here are a few things I got with coupons!
This total was $17.23....
Yoplait Yogurt .37 each (My kids eat yogurt every day)
Colgate tooth brush .79
Tortilla chips .01
Mustard .38
Dial Soap .50
Wisk Laundry Deterg 2.49
Dr. Pepper 10   .39  ....I normally do not buy soda BUT for that price I treated the kids!  This will be the only soda I buy for months.
Corn on the cob was .75 for three..not bad
Purina Busy Bone  .89
KRAVE cereal $2.00 a box--not great BUT since I bought 3 boxes I got $3 off milk!  My hubby and kids LOVE cereal for a snack at night..esp this kind...with chocolate!  It is YUMMO!

This trip I also bought these items on sale at Publix:
~Fresh Salmon (2 servings) 6.99 total  = $3.50 a serving (My kids dont like it : (
~Pork Shoulder Country Style Ribs @ 2.49 LB...I spent $6.10 which will feed all 4 of us at least!
*I make these ribs each week and they are DELISH!  I put them in the crock pot FROZEN on high for 4 + hours and they are done, fall off the bone!  Season any way to like...spices, dry rub, or BBQ! 
~Whole Chicken @ $1.29 LB...I spent $5.78 for a 4.68 LB chicken.  I plan to make 2 + meals out of this bird and make chicken stock with it as well =)

Chicken Tortilla Less Soup

I make this soup all of the time and each time it is made differently!  Just depending on what I have on hand!  As long as you have chicken breasts, chicken stock, and some various veggies you are good to go!  This time Ihad yellow peppers, green peppers, onion, garlic, fresh cilantro, and lots of tomatoes!

This recipe calls for canned tomatoes but I always use FRESH!  Usually I can find them at the "sale" table at the farmers market! 

Recipe I used tonight:
3 chicken breasts cooked by oven or crock pot seasoned with Chili powder, cumin, garlic powder, and crushed red pepper.  This is also a great home made taco seasoning!
Oil (coconut or olive oil)
1 large onion chopped
2-3 cloves of garlic
1 green bell pepper
1 yellow pepper
(Usually I use jalepeno peppers or Pablano peppers but I was out)
6 cups chicken stock
2-3 large tomatoes diced
Juice of 1 lime
Cilantro (as much as you'd like)
Avocado and Cilantro for garnish



Bake or crock pot chicken breast, cool and shred
Saute onion, peppers, garlic in oil (coconut oil or olive oil) in large pot
Add chicken stock, shredded chicken, tomatoes, and lime juice
Bring to a boil & cook for 1 hour on med heat
Add salt and pepper to taste
Top with Cilantro and Avocado

Chicken Avocado Salad

I saw this recipe on Pinterest and just happen to be broiling some chicken so I went ahead and made it!  It was quick and easy! 

There are no "exact" measurements...but this is what I did:

2 chicken breasts cooked and pulled/shredded (this made 2 servings so cook more for leftovers)
1 Avocado (use as many as you like)
Juice of 1 lime
chopped green onion
Cilantro
salt to taste

Mix well and enjoy!

Farmers Market Deals!

Today I hit the farmers market for some veggies and of course I got some great deals!  Not everything is cheaper at the market compared to Publix....but Cilantro is at .79  bunch!  Now my green onion I got at Publix today at .60 each bunch compared to 1.99 a bunch at the market.  Once you go a few times you know what to buy at the market and what to buy at Publix and since I go to both places each week (since they are right across the street from each other) it's not out of my way!


These finds were a total is $7.06!

Paleo Raspberry Vinaigarette Dressing

This dressing is pretty simple, yet amazing!  I got it off of a Paleo website back in January.  It's a must try!

3 tbsp olive oil
2 tbsp raspberry vinegar
1/4 c. fresh raspberries, crushed to a puree (I used my blender)
Salt and pepper to taste


Blend these items together.

Serve on top of salad (spinach blend) with sliced red onion and walnuts!
