Publix deals

Here are some deals I scored today at Publix!  Half of my coupons were from newspapers and the other half I got from coupons.com and redplum.com.  No worries, I know it looks like a ton of cookie dough BUT I bake a lot around Halloween for my work and Justin's work plus neighbor kids each afternoon :)


Total spent $18.95, saved $37.46  (Each item was BOGO except for the Del Monte fruit squeezes)

Arugala Chopped Greek Salad with home made dressing

This was a great salad!  Found this on health bent.com

Here is the recipe!

Ingredients

  • 1 English (also called Hot House) cucumber
  • 2 green onions
  • 1 pint cherry/grape tomatoes
  • 1 handful kalamata olives
  • 4 pepperoncini peppers
  • 2 handfuls arugula greens
  • juice of 1 generous lemon
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh mint (I do not care for mint so I did not use this)
  • 3 tablespoons extra virgin olive oil
  • salt & pepper
  • feta, if you want (YUM, I added this)
 
 

Method

Get out a storage/serving container.
Chop up the cucumber, green onions, tomatoes, olives, peppers and arugula. (If you are trying to save time and make ahead, do not add the Arugula just yet, wait till your ready to serve)
Toss them into the container. Add in everything else.
Make sure you generously season the salad with salt and pepper, to your liking of course.
Stir to combine.


Salmon with Avocado Salsa

This was a wonderful recipe I tried tonight!  D_E_L_I_S_H!  Trust me!

Ingredients
 
 
  • 2 lbs salmon, cut into 4 pieces
  • 1 tbs olive oil
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • Avocado salsa
  • 1 avocado, peeled, seeded and sliced
  • 1 small red onion, sliced
  • 3 mild hot peppers, seeded and deveined, diced or sliced
  • Juice from 2 limes
  • 3 tbs olive oil
  • 2 tbs finely chopped cilantro
  • Salt to taste
  • Instructions:
 

  1. Mix the salt, coriander, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix, and refrigerate for at least 30 minutes.
  2. Pre-heat the grill.
  3. Combine the avocado, onion, hot peppers, cilantro, lime juice, olive oil and salt in a bowl and mix well, chill until ready to use.
  4. Grill the salmon to desired doneness.
  5. Serve the salmon topped with the avocado salsa.

Paleo Crock Pot Chili

I decided last week to search out new recipes!  I am tired of the old!  Time for a change!  I found about 5 new recipes that I will share this week as I make them!

Tonight it was a chili recipe from paleonewbie.com.  This turned out to be a good chili recipe!

Here is the recipe!

Ingredients
  • 2 lbs. of lean ground beef
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red and 1 green bell pepper, both diced
  • 1 cup of carrots, finely diced
  • 1 cup of celery, diced
  • 1 jalapeno, minced
  • (1) 28-ounce can of crushed or stewed tomatoes
  • (1) 14-ounce can of diced tomatoes
  • (1) 15-ounce can of tomato sauce
  • ****I chopped up all of the veggies the night before and stored in a large container to save time in the morning****Also don't forget to thaw the ground beef the night before****
  •  
    Spices
  • 3 tbs. of chili powder
  • 1 tbs. of oregano
  • 1 tbs. of basil
  • 2 tsp. of cumin
  • 1 tsp. of salt
  • 1 tsp. pepper
  • 1 tsp. onion powder
  • 1/2 tsp. of cayenne
  • Garnish
  • About 4 pieces of bacon, fried and crumbled (This makes the dish)
  • 1 or 2 avocados, diced
Instructions
  1. Saute onions and garlic together in a large saucepan over medium heat
  2. Add ground beef to the saucepan, and brown
  3. Drain excess fat
  4. Transfer the cooked onions, garlic and meat to your crockpot
  5. Add all vegetables and spices (except garnish ingredients) to the crockpot
  6. Give it all a good stir
  7. Set crockpot to low and allow to slow cook for about 6 hours
  8. Spoon into individual bowls
  9. Garnish with crumbled bacon and avocado slices
  10. Serve hot and enjoy!
