Affordable...of course!  Did you know that every dish has a "best by" date sticker on it?  Well if you come in and find a dish that is dated today's date that dish is 50% off!  Yes!  How savvy is that?  It gets better...wait....you can walk in and ask the employee for the "board".  This board will list all foods that are 50% off, the size of the meal, and how many they have in stock.  This saves you time from looking through all that amazing food!  fitlife foods makes it so easy to eat healthy and save $$$$$.

Fall Open House..Zo Medical

A few weeks ago I got an invite to the Palm Harbor Plastic Surgery Centre's  http://www.phpsc.com/ Fall Open House Event.  This is a fabulous event and a great time is had by all each and every time.  The food is awesome and the women who attend are very nice.  I invited a few of my girlfriends and Caroline even won a door prize...Latisse!  



We all bought some products/make up and this is what I ended up buying.  I love the ZO Medical products and with 25% off discount at the Open House it was a deal!  Of course with a purchase there is always a free item or two which is always great!

Whole Foods Deals

This morning I got up and hit the new Whole Foods near my house for the Grand Opening!  I got there, waited 2 minutes in line and was given a gift card.  I then went back home to finish getting ready for work and returned later to spend my $20 gift card!  Nice right?

Winn Dixie Deals

This week I picked up the Winn Dixie Deal of the week.....Buy the protein on sale for $19.99 get the rest for FREE!  Now I won't use anything but the protein but Justin lucked out with the drink, bars, and blender bottle!


Kale, Shitake Mushroom and Beef Soup

This recipe came from one of the many cook books I borrowed from the library.  I did not follow the recipe..at all....but it tasted pretty good!

Ingredients:

1/2 cup shallots , chopped
Stew beef cut into chunks
1/2 cups sliced Shitake Mushrooms, stems removed (I used reg mushrooms that were on sale)
1 bag of baby carrots
4 gloves garlic, minced
3 tomatoes chopped
4 cups beef broth (I had some leftover chicken broth so I added 2 cups of chicken broth in addition)
1 tsp sea salt (add more if you prefer)
1 tsp pepper (add more if you prefer)
1 tsp red pepper flakes (I added more since I love red pepper)
1/2 bag of curly kale, stems removed
1 tbsp Organic Tamari or Coconut Amino's --I used Tamari since that is all I had on hand

Throw everything except the kale into your crock pot on low heat.  Cook for 5-6 hours and add the kale the last 15 minutes and stir until tender.  Feel free to add more spices, salt, pepper, and Tamari as needed.

Crock Pot Honey Garlic Chicken & Quinoa Pepper Casserole

This was tonight's dinner....I have no idea where I found this recipe but I know I got it off Pinterest in the "Paleo Make Ahead" category. 



Ingredients:

2 lbs Chicken breasts
3 Garlic cloves , minced
1 tsp Dried basil
1/2 cup coconut amino's 
7 oz Tomato sauce
1/3 cup raw honey
1 Bag of baby carrots

Throw everything in the crock pot and cook on low for 4-6 hours.  
**If you are making meals ahead for future--Place all ingredients in a gallon size freezer bag.  Seal bag and place in freezer for future use.  Thaw overnight in fridge and cook on low in crock pot for 4-6 hours.

My side dish was a recipe from Betsy at the gym....

Ingredients:

Peppers- as many as you want to make. Yellow, orange or red are best. You have to adjust the 
amount of the other ingredients accordingly if you make more/less. For this recipe I will go with 
3 peppers. 

Dice peppers
1 medium Vidalia or sweet onion
1 small can Ro-tel hot tomatoes with habaneros
1 large can diced tomatoes
Summer squash- 3
Quinoa 2 cups cooked (approx)
Garlic salt and black pepper to taste

Ground chicken (I usually get the organic kind but whatever you like) about 1 package 
Put chopped pepper, chopped onion and chopped squash in a pan with a little olive oil and 
sauté until tender. Add the chicken and cook until done through then add; tomatoes, cooked 
quinoa, garlic salt and pepper and cook for a few minutes to blend flavors. Put mixture in a pan.
Top with a little shredded cheese if you like then bake 350-375 for about 20-30 minutes until 
bubbly.

Sweet Potato Salmon Cakes

This recipe is from the cookbook The Paleo Foodie.  I checked this cookbook out at my local library.  This turned out really good.  I was scared we would be having frozen pizza after all was said and done but luckily it turned out well :)  http://www.lamag.com/recipes/recipe-sweet-potato-salmon-cakes/



Ingredients: 
 ¼ cup/10 g parsley, chopped 
¼ cup/10 g scallions, chopped 
¼ cup/45 g red bell pepper, chopped 
12 oz/340 g of canned, boneless pink salmon or cooked fresh salmon 
1 medium sweet potato, peeled, boiled and mashed 
2 eggs, separated 
¼ tsp cayenne pepper 
½ tsp sea salt 
¼ tsp pepper 
2 tbsp/30 ml coconut milk  
2 tbsp/15 g coconut flour 
2 tbsp/15 g arrowroot starch 
¼ cup/60 ml coconut oil for frying


Cooking Instructions: 
In the bowl of a food processor combine parsley, scallions and red bell pepper. Pulse a few times until well combined. In a medium bowl, combine the parsley, scallion and red bell pepper mixture, salmon, sweet potato, egg yolks, cayenne, sea salt, black pepper, coconut milk, coconut flour and arrowroot starch. Mix using your hands, until all the ingredients are well combined. Make the mixture into patties, about the size of your palm and 1-inch/2.5-cm thick. This mixture should make about 12 patties. Heat a heavy-bottomed skillet, such as cast iron, over medium heat. Add coconut oil. Using a pastry brush, coat both sides of each patty with egg whites. Once coconut oil is melted, add the salmon cakes to the pan and cook for 3 to 5 minutes per side. Cook in batches so as not to overcrowd the pan. Add more coconut oil as needed. Cook until well browned, crispy and heated through. 


  I made a romaine and kale salad to go with it.

Creamy Crockpot Chicken and Kale

This morning I started this easy dish in the crockpot and it was delish!


INGREDIENTS:

4 chicken breasts
1 onion, in strips
28 oz  can organic crushed fire-roasted tomatoes
1 15 ounce can organic black beans
4 cups fresh organic kale, chopped (I used kale and spinach)
1 teaspoon garlic powder or 2 garlic cloves finely chopped
1 teaspoon italian seasoning
dash of cayenne pepper
1 teaspoon  salt
1/2 teaspoon pepper
80z chèvre goat cheese OR organic cream cheese (you can do canned coconut milk for a 100% dairy-free option)--I used 1/3 less fat cream cheese

DIRECTIONS:
  • In a crock-pot combine chicken, onion, fire-roasted tomatoes, black beans, kale and spices and stir together.
  • Cook on high for 4 hours, stirring occasionally. If you aren’t able to stir the dish, make sure the kale is covered by sauce so it won’t burn throughout the day
  • 30 minutes before serving, stir in the goat cheese or cream cheese and serve
