Breakfast Frittata

Tonight I also made breakfast for the rest of the week.  This was easy and I had everything on hand.

Ingredients:

Turkey Breakfast Sausage (I cooked this a few days prior)
Fresh chopped organic spinach (I get mine at Aldi $2.49)
1 tbsp Olive Oil
1/4 minced red onion
1 minced Garlic Clove
6 large egg yolks (Organic Cage Free @ Target $2.99)
2 tbsp Milk
1/4 fresh Parmesan Cheese
1/2 cup chopped cherry tomatoes
Chopped Green Onion
Salt and pepper to taste




Preheat oven to 350.
In a mixing bowl, whisk eggs, milk, and parm cheese.  Then add chopped tomatoes, salt, and pepper.



In a skillet, saute onions, garlic, and green onion. 
Add spinach and already cooked sausage and saute for a few more minutes.
Spray muffin cups with non stick spray and add the spinach, onion mixture to cups, about 1/3 - 1/2 way full.




Pour egg mixture over the top.

Cook about 12-15 minutes.

Rosemary Lemon Crock Pot Pork Loin w/ Parm Asparagus

Tonight's dinner was quick and easy to prep!  Tuesday nights are super busy at our house and no one gets home until after 7 which is very late for us!

This afternoon after I got off work, I put a thawed out pork loin in the crock pot.  



*Prior to sticking it in there, I rubbed olive oil all over it.  
*Then I rubbed Garlic Sea Salt, pepper, and fresh  rosemary all over it. 
*Threw it in the crock pot and sliced up a few lemons to put on top of it.  I also squeezed fresh lemon juice on it also. 
*Add a pinch of water to the bottom of the crock pot and your set!

Cooked it on low for 4 hours and it was DONE!  I served it with oven roasted Parmesan Asparagus.  



*I washed and cut the ends of the asparagus
*I took a glass dish and added a few drops of olive oil
*Throw in your asparagus and lightly brush the asparagus with a lil more olive oil
*Season with Garlic Sea Salt and some Parmesan cheese

Bake for 12 -15 minutes

Crock Pot Roast

This morning I put in a roast I picked up from Target.  I threw some chopped sweet potato's, carrots, onion, and mushrooms in there.  Sprinkled some garlic power, sea salt, onion powder, and pepper.  Added  some water to the crock pot.  Easy and delish!  I served mine over a small portion of whole wheat brown rice.  Yum!!!!

Paleo Plan-Chicken with Cumin, Kale, and Peppers

Tonight I made this yummy dish!  If you don't like Cumin, don't make this dish!


  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp sea salt 
  • 2 cloves garlic, minced
  • 1 Tbs coconut oil
  • 1 bunch kale, removed from woody stems
  • 1 red bell pepper, diced (I used Green and Yellow )
  • 1/2 cup slivered almonds, lightly toasted

  1. Combine chicken, cumin, chili powder, sea salt (if desired), and garlic in a medium bowl until chicken is fully coated.
  2. Meanwhile, heat a large skillet over medium-high heat. Add coconut oil.
  3. When pan is hot, add chicken (it should sizzle). Brown the chicken and stir occasionally (about 5-7 minutes).
  4. Add kale leaves and red pepper. Stir and continue to cook until chicken is 165° F, and vegetables are slightly tender (about 5 more minutes).
  5. Serve hot, topped with toasted almonds.

Paleo Beef Stew

Tonight's dinner was Paleo Beef Stew.  I have no idea where I found this recipe but I know I found it online....somewhere.....and it is good!  I have made this over and over!!!


Crock Pot Paleo Beef Stew

Ingredients:

1 lb lean stewing beef; 
4 cups organic  beef stock; 
1 c water
1 cup onion, chopped; 
1 cup celery, chopped; 
1 bag of baby carrots 
Fresh Green Beans
Bag of frozen peas
3-4 small fresh tomatoes, chopped
½ tsp fresh rosemary (optional)
½ tsp fresh thyme (optional)
Sea salt and freshly ground black pepper to taste
Garlic salt to taste

Throw everything into a crock pot.
Set on low (first thing in the a.m. or High if your starting this around noon).
Done!!!!

Zucchini noodles with the Veggetti!

Well I have used my Veggetti twice and it worked great!  I just put it in the dish washer so we will see how well it cleans up ;)

Last night I used it for  making pasta noodles to go along with baked fish.  I tossed it in coconut oil, added some garlic, mushrooms, and cherry tomatoes.  It tasted great but it sauteed too long so it was a bit mushy but still tasty!


Tonight I made some more noodles to go with my Paleo spaghetti sauce I made yesterday.  This time I boiled the noodles for 3 minutes as directed and again it was mushy so.....from now on I will saute for a just a few minutes to keep the consistency I prefer.  I also really like spaghetti squash better for this type recipe.

The Veggetti

My sweet co worker brought me this wonderful little tool today and I can't wait to use it!!!  I am heading out of town in a few days but as soon as I get back I will report on how well it works!!!!  I am thinking some spaghetti sauce over zucchini noodles :)


Teacher appreciation gifts

Here is a gift I made tonight for my kids teachers.  I found this on Pinterest.  It was inexpensive and easy to make!  I bought some pink Dial soap (either for classroom use or home use..), pink nail polish, a nail conditioner polish, a foot brush (for a pedi), and a pack of gum. I attached a hand (found a template online..search hand pictures) and cut it out using decor paper.  I attached a note that said "You deserve a hand  for all you do".  You could add nail polish remover (which I forgot).  Easy, done, and thoughtful!




Eating out deals..b-fast and lunch

Today I ate out for both breakfast and lunch which I hardly ever do..maybe once every few months.  I decided to eat out because 1) I had a coupon for any smoothie @ Tropical Smoothie for $1.99.  I got the muscle blaster..it was good!  2) I have a Chick Fil A calendar card and this month is a FREE salad.  It was so nice to eat out for about $2 bucks :)

Taco Salad

Here is an easy and quick Taco Salad that has been in the family for many years!  We had it tonight in celebration of Cinco de Mayo!



Chop up some romaine lettuce or use "ready to go" lettuce.  Add some chopped tomatoes.
Next, add some broken up tortilla chips, add some ground beef (seasoned with taco seasoning, onions) and add some cheese.

Next add some French dressing and toss everything!!!!

JC Penney Deal....Yellow Box flips!

I was at JC Penney this weekend getting flip flops for the kids for our upcoming trip next weekend and found my favorite black yellow box flips (that broke at Busch Gardens this past summer--they were years old).  I also had a $10 off $25 purchase coupon...so these were $45 - $10 = $35!!!!  Yay!!!


Aldi Deals....and it's NOT groceries this time!

So I was at  Aldi this past weekend and was not planning on this purchase but since my sunglasses broke several months ago (cheap pair) I went all out!  These shades were $4.99 a pair!  Wow!  Perfect for me since I am all about cheap shades ;)  They look great too!!  Double score!!!!



I also found this treasure!  Thought it would go great indoors or on my back porch when company is here!  Deal was $6.99!!!  Battery included!!!

Winn Dixie Deals.....Treats and Sweets

Here are the deals I scored at Winn Dixie this afternoon.  Do not judge, we like to eat sweets and treats here and there!  We are not 100% Paleo as a matter of fact I consider myself more Primal..80% Primal/20% whatever the hell I wanna eat but these items don't fit either category....LOL

Deal was buy any 4 items  for $10 (cereal, Fiber One bars, etc) and get a gallon of milk free!!!!  I chose cereal since it's a treat for my kids!!!
Milk costs $4.19 a gallon so it's worth it right there!  I had a few coupons too!

Cereal $2.50 each box - .50 Manf Cpn for each box  = $2 each box
Milk = FREE

Total $8.00 for everything :)

Next was another sweet treat...wine and ice cream!!!  I rarely ever buy ice cream but at this price how could I not???
