Monday Meals.....

So here are a few meals I ate today...............this certainly is not everything I ate, ha!!!!!!!

 Breakfast was organic cage free eggs, mushrooms, peppers, tomatoes, onions, and garlic salt

Lunch was Fit Life Fire Cracker Shrimp (I added salmon from last nights dinner)

 Dinner was Paleo Pepper Steak..so easy and delish!

Sunday Dinner...Salmon and Salad

Here is what we had for dinner on Sunday.  

Green salad with cherry tomatoes, banana peppers, and feta cheese 

Salmon (from Sam's Club) with Organicville Organic Sesame Teriyaki marinade (Publix) over steamed whole grain rice (Publix frozen rice)  with almonds (I added sliced almonds to the rice).

Easy and delish!

Meals for the week....

I have always had a Sams' Club membership and have rarely used it since moving here.  Anything 5+ miles or more away I rarely frequent.  So this week I was off Friday and decided to hit Sam's to get my meats and milk.  The prices were good!

Dillards Deals

This week Dillard's had their clearance an extra 30% off.  Usually I don't shop the 30% ( I wait for 40%-50%) but when I browsed I found some great deals for my son (school clothes).

Tonight's dinner was simple and easy!

Trader Joe's Free Range Chicken Broth (2-3 cups)

Salt & Pepper

Publix brand bag of whole grain steamed rice in frozen section

Throw everything but the rice in the crockpot.  Salt and pepper everything.  Cook on low for 6 hours.

Heat up the rice in the mircowave and enjoy!

A few of my favorite things this week

Here are some of my favorite things this week!!!  

First off is this lettuce.  I get it at ALDI and it's $2.99.  It comes with 4 small heads of lettuce, 3 different kinds.  It's very fresh and crisp!!!

Next is Joseph's Flat bread.  It was BOGO at Publix and I make flat bread pizza and sandwiches with it.

5-Minute Prep Crispy Honey Pork Tenderloin

This was super easy and delish!!!!!!

Ingredients

• 1 pork tenderloin, about 1.5 to 2 pounds
• ½ cup honey (preferably raw)
• couple teaspoons of garlic powder
• couple teaspoons of salt

Instructions

1. Preheat oven to 375 degrees.
2. Line a baking sheet with aluminum foil.
3. Baste the tenderloin generously with honey, then sprinkle with the garlic powder and salt.
4. Bake in oven for about 15 minutes, then lower the oven rack and turn the broiler on.
5. Broil for about 10 minutes, until juices run clear.
6. Let sit for about 5 minutes before carving.
7. Note: if your tenderloin is bigger, adjust the cooking time accordingly.

Target Cartwheel Deal

On Sunday I went to Target to get reusable water bottles for the kids summer camp.  I found some in the $1 bin plus I had a 30% off 4 items so each water bottle was .70.  

I also saw that cartwheel had a 40% all jewelry that expired same day so I picked up a cool metallic necklace and bracelet set.

On Sunday I scored a great deal on REDKEN shampoo.  Normally a small bottle is $16.99 at ULTA.  I try to buy liters as the deal is much better.  This deal was awesome!

So today I used my chick fil a calendar card and got lunch for FREE!  Grilled chicken sandwich and a large coke was the June free offer....however, I only drank 1/4 of the coke :)  I also got rid of the top bun :)

My next deal was at Marshall's...I scored these shoes for $12!  Perfect for work and church ;)

My last deal was an order that came in the mail today!  It was from The Childrens Place.  They offered 40% off everything + free shipping!   For $50 I got a dress, pj's, 3 pk panties, 2 pairs of shorts, 1 t shirt, and 4 skorts!

CHICKEN MEDITERRANEAN

This recipe came from http://www.paleoplan.com.  It was easy to prepare!!!  I have not actually tried this yet as I made it for my lunch tomorrow....but it looks great :)

• What you need:
• 1 cup cherry or grape tomatoes
• 16-18 large Kalamata olives, pitted and halved
• 3 Tbs capers, rinsed
• 2 Tbs olive oil
• 4 (4-6 oz) boneless, skinless chicken breasts
• sea salt and freshly ground black pepper

1. Pre-heat oven to 475℉.
2. Toss tomatoes, olives, capers, and 2 tsp olive oil in a bowl.

1. Season chicken breasts on both sides with sea salt and freshly ground black pepper.
2. Heat a large, oven-proof skillet over high heat.  Once hot, add 2 tsp olive oil and sear chicken on both sides.

2. Turn heat to medium-high and add remaining oil (should be hot but not 
3. smoking) and continue to cook until deep golden brown (about 4 minutes).
4. Use tongs to flip chicken, then add tomato mixture to skillet.
5. Transfer skillet to oven and roast chicken until cooked through and tomatoes have softened, about 15-18 minutes.
6. Transfer to plates and spoon tomato mixture over top to serve.
