Philly Stuffed Peppers

I made this tonight out of my cookbook Primal Cravings.





  • Ingredients 

    • 2 Yellow onions thinly sliced
    • 8 oz mushrooms sliced
    • 1 lb ground beef
    • 2 tbs hot sauce
    • 3 tbs Worcestershire sauce
    • bell peppers
    • 4 oz provolone cheese
    • Butter for pan
  • Instructions Edit )

    1. 1. preheat oven to 350 F
    2. 2. cut each pepper in half lengthwise, remove stems and pick out white membrane and seeds. place peppers on baking tray and bake until tender
    3. 3. meanwhile in a large saute pan melt a tabs of butter over medium heat. add onions and mushrooms and saute until the onions are slightly golden in color. remove from the pan and set aside
    4. 4. add ground beef hot sauce Worcestershire sauce and salt to the saute pan. Cook until the meat is browned, making sure to let any liquid that releases from teh meat evaporate. Add onions and mushrooms back to the pan. stir to combine
    5. 5. remove any water that's accumulated in the baked peppers. Evenly stuff the ground beef mixture into each pepper
    6. 6.if using cheese, top each pepper with it and pop them back in the oven long enough to melt the cheese

Here are some last minute Publix deals I scored today!  These Green Giant Steamers were BOGO @ $2.59, I had a $2 off 2 coupon so I paid $.59 for two, .30 each bag.  I got 8 bags..mostly broccoli since they were out of everything else.  Good thing we like broccoli!

 This morning I got a 4 mile run in before heading to work.  It was such a beautiful day :)



This workout consisted of 20 reps of almost every exercise repeated 3 times :)  This workout took me 47 minutes to complete (not including my run)......

Target Deals! Paper Products and Dresses!

Today I ran over to Target to buy a few birthday gifts and use my $5 off Up & Up paper products coupon.  I found this coupon in the Target ad this past Sunday plus toilet paper and paper towels were on sale plus they were also on the Cartwheel @ 5% off!  Triple Score!



Here's the breakdown:

These were $19.99 each, however, I pulled up my Cartwheel in the store and saw that today only Merona clothing (up to 4 items) were 40% off.  I scored these great dresses for $11.99 each!  Totally awesome :)
P.S. These dresses come in solids too....blue and black!

Paleo Coconut Ginger Mushroom Chicken

This is what I made for dinner tonight straight out of my cookbook....

    
Ingredients
  • 1lb chicken thighs
  • 1 can coconut milk
  • 3 tablespoons freshly grated ginger
  • 1 package shittake mushrooms, sliced
  • 1 package crimini mushrooms, sliced
  • 2 garlic cloves, minced
  • ½ sweet onion, thinly chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper, to taste
  • 1-2 tablespoons fat of choice
Instructions

  1. Let’s get you prepared. Preparation is key. You will need 2 separate skillets for this meal. One large, one medium.
  2. First place the large skillet under medium heat and add a bit of fat along with your minced garlic and onion. Cook until onions are translucent.

 3.  Next, add your can of coconut milk and mushrooms to begin to cook down. Reduce the heat         and let them flavors simmer. Reducing the heat is important so the coconut milk                         doesn’t play splishy splash on your counters/stove top….like it did on mine.




4.  Once the mushrooms become tender, use your grater for some fresh ginger directly into the        pan. Mix together. Add salt and pepper to taste and cover to let cook while you cook your          chicken.

5.  Now put your medium skillet over medium-high heat and add a bit of fat to your pan. While          the pan heats, season your chicken thighs with salt and pepper along with the garlic and            onion powder

6.  Add chicken thighs to pan and cook on both sides for 4-6 minutes, depending on thick the          thighs are.
7.    Once the chicken is almost done cooking, add them directly to your coconut milk pan, coverand let cook for about 3-5 minutes to let the chicken absorb some of the liquid.

8.  Now they are ready to eat! Serve along side broccoli. Obviously.

Chocolate Coconut Scout Cookies (Primal Cravings Cookbook)

Here is one of many new recipes I am making this week.  I got new cookbooks at Christmas and have rarely looked through them since....so last night I went through it and found a few good lookin' items to try!

First off was this cookie recipe.

Chocolate Coconut Scout Cookies (primal cravings)

Ingredients:
1 1/4 cup unsweetened coconut, shredded
1/3 cup coconut sugar
1/4 cup coconut oil melted
1 egg
1 teaspoon vanilla extract
1/4 cup chocolate chips



Directions

  • preheat oven to 350. Line a baking sheet with a silicone pat or parchment paper

  • Large bowl, whisk together coconut, coconut sugar, coconut oil, egg, and vanilla extract. Fold in chocolate chips 

  • Place uniform circle drops onto baking sheet
  • Bake until edges are golden brown, about 15 minutes

I will admit, I made two different batches and the each batch turned out the same, taste was great but they were greasy and not cookie like.  They were flat and greasy on the bottom.  Anything greasy turns me off!  But again they were tasty!!!

At Home WOD

Arugula and Prosciutto Pizza w/ Gluten Free, Dairy Free, Wheat Free Crust

Tonight I made an Arugula and Prosciutto pizza.  Originally I wanted to make this with chick pea flour but after visiting three stores locally, no one carries it :/  I then decided to try this...............

It was ok....I could have put more seasonings on it like garlic, etc but did not.  I only used red pepper flakes and pizza sauce.  Again it was not terrible, just ok.

First I followed the directions and got everything mixed together.  


Next I covered it with saran wrap and let it sit for 20 minutes.


After that, I wet my hands and spread it all over the pan as best I could --did not do a great job..LOL.


I baked it 7-9 minutes 


Once it is baked, add the pizza sauce, spices, toppings, etc.  Bake for 15-17 min.  Top with Arugula after you take it out of the oven.  It was pretty yummy!

What I ate ......b-fast to lunch!

So here is what I ate today for b- fast, snack, and lunch!  I love food and food is fuel!!!

Breakfast was a spinach smoothie!  Frozen strawberries, water, splash of OJ, spinach, and vanilla whey protein.  I promise you can NOT taste the spinach...otherwise I would NOT have it!  It has to taste GOOD!

This breakfast item is my brunch!  My snack between b-fast and lunch!  You need to eat and snack!  Make sure it's fuel!!!!   Protein, veggies, and lil carbs if your really active!!!!  This recipe I give credit to Carly Hunkin my trainer who posted it and  http://www.marksdailyapple.com/bacon-egg-avocado-and-tomato-salad/#axzz2z6nCNiOb  I stay full for 2-3 hours after this b-fast!  Delish!  


This is lunch which was last night's dinner in a small portion of course!  Beef Stirfry!  Lean Beef from Publix, Eat Smart Veggie Stirfry from Publix  (1.66), and Organic Ville  Sesame Teriyaki USDA  Organic marinade and sauce ($5.27).  Delish and fuel!  

Again, this is just my b-fast, snack, and lunch for the day.  This does not include my snack, dinner, and snack for the rest for the day!   EAT folks!  Just make sure it is FUEL for the BODY!  I am 5'0 feet tall and weigh 116 lbs.  I eat 6 times a day, almost always a protein is included, and I have a few glasses of wine each night!  You can EAT and have WINE and be HAPPY :)

My new piece...and it's not jewels....LOL

So I sent my son out to get his sister from the neighbors this morning  (she slept over and we needed to get to church).  He came home so excited that there was a table by the road....FREE!!!!!!!!!!!!!!  So me in my hair wrap and pj's ran out to check it out!  SCORE!  Trent and I carried it home (2 doors down) and it was heavy!  Solid wood!  We had to set it down twice on our route.....LOL....Justin about died and gave me a lecture on how we did not have room for anything else, however, as the day progressed he did admit that the table I picked up was much better quality than the one we got Kendra for her room at Target :) 
Give me a month and it will look much better!

What I ate....

Breakfast today was yummy Paleo Choc Chip Banana Bread!  I make this once a week and it is DELISH!  I enjoyed it with a cup of coffee!  Perfect!  The recipe is below :)



Lunch at the beach was an Italian Wrap from Publix, wheat wrap, meat, and veggies!  Delish...to bad I did not get a pic :(

Dinner was blue cheese bacon burgers with pickle and tomato!  Yum!  I had a side of mixed greens with paleo home made dressing while the others had french fries...LOL.

Here is the recipe for the salad dressing...it is delish!  I keep it in my fridge at all times!!!

Ladies Night Out & ZO Medical Products

Last night was Ladies Night Out at the Palm Harbor Plastic Surgery Centre.  This event happens about three times a year and this was my third time attending.  The first time I went, I knew no one at all and just went for the heck of it.  There I met new friends and since then, we meet up at these events each time and enjoy wine, great food, and wonderful conversation.
