Thai Basil Beef Balls & Pesto Zucchini Noodles with Tomatoes



Tonight I was super hungry, so I made a few different things!  First off I found some BBQ pulled pork in the fridge and decided to make some pulled pork nachos as an app!  Yum!  Anytime I can order this out I do!

Cooked Pulled Pork -Blue Corn Tortilla Chips, Shredded Cheese, Jalepeno's, Diced Onion & Tomato with a squeeze of Lime!  Delish!


Our main entree was Thai Beef Balls. I got this recipe from http://www.health-bent.com/beef/paleo-thai-basil-meat-beef-balls 

I made only a 1/2 recipe as I had to share the ground beef with the kids plus I wanted to see if these were gonna be any good--they ate taco's for dinner!




Ingredients

  • 4 cloves garlic, minced
  • 2 lbs ground beef (preferably 80/20)
  • 1/2 c almond flour
  • 2 eggs
  • 1 roasted red pepper, about 1/3 c, chopped
  • 1/4 c wheat-free soy sauce or coconut aminos
  • 1 t fish sauce
  • 1 t sriracha, chile sauce or hot sauce
  • 1 handful of fresh basil leaves chopped
  • 1 lime, zested
  • salt

Method

Preheat your oven 400ºF.
In a small skillet, heat up a teaspoon or 2 of fat of your choice and saute the garlic until it’s golden, but not brown.
In a large bowl, whisk together all ingredients (except the beef). Now add the beef and mix well, making sure everything is thoroughly combined.
Portion out the mixture, using a cookie scoop, onto a parchment or silicone/silpat lined baking sheet.
Pop in the oven until cooked through, and the tops have slightly browned (you may need to switch to broil), about 20-30 minutes.

Raw Zucchini Noodles with Tomatoes and Pesto

Ingredients:

For the Pesto:

  • 1 cup packed fresh basil
  • 1 clove garlic
  • 1/4 cup fresh grated parmesan cheese
  •  kosher salt & pepper to taste
  • 3 tbsp extra virgin olive oil

For the zoodles:

  • 21 oz (3 medium or 4 small) zucchinis
  • 1 cup heirloom grape or cherry tomatoes, halved
  • kosher salt and black pepper to taste


In a food processor pulse basil, garlic, parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing. Set aside.
Spiralize the zucchini, cut it into smaller strands if they are too long and place them in a work bowl. Toss with the pesto and tomatoes and season with salt and pepper as needed.

Italian Style Chicken and Spinach Parmesan Quinoa

Sunday I made a new dish found on Pinterest!   Italian Style Chicken and Spinach Parmesan Quinoa.  The chicken was made it the crock pot.

First off, when I went to Walmart I found they mismarked the chicken!  Yes $2.13!  Deal of the day!  It was the only one, otherwise I would have bought more!  It should have been $1.99 lb not $1.07 lb!


Here are the other ingredients.........

Crock Pot Italian Style Chicken 




2 lbs boneless skinless chicken breasts
1 large diced tomato
1 c chicken broth
1/2 onion minced
2 tsp chili powder
1/2 tsp dried Tarragon
1/2 tsp Italian Seasoning
1/4 tsp garlic powder

Place everything in the crock pot.  If you plan to double this recipe and freeze--- place all ingredients in a large freezer bag except for the chicken broth!

When ready to cook, defrost and place in slow cooker.  Add in chicken broth.  Cook on low for about 4 - 5 hours.

Ingredients:

1/2 c chopped onion
2 garlic cloves minced
1 tbsp olive oil
salt and pepper to taste
1 cup quinoa
2 cups chicken stock
2 handfuls baby spinach
1/2 c grated parmesan cheese




Directions:

*Heat olive oil over med heat in saucepan.  
*Add onion and suate 5 min .  
*Add garlic and saute 1 more minute.  
*Season with salt and pepper.  
*Add quinoa and saute for 2 more minutes.
*Stir in chicken stock and bring to a boil.  
*Reduce heat and simmer covered for about 15 minutes until liquid absorbed.
*Add spinach to the pan and cover for a few minutes to allow spinach to wilt.
*Once spinach starts to wilt, stir into quinoa and stir in parmesan.  Serve immediately.

What I ate....

Here are some of the things I have eaten this week!  Just a few bites I wanted to share!

This meal is super easy!  Roast, carrots, sweet pot, and onions in the crockpot on low for 6 hours!  Season the roast with garlic powder, onion powder, salt, and pepper!  Done!  I put mine over a little whole grain steamed brown rice.




This pizza was good.   Publix Organic Veggie Pizza.  Will def buy it again.  $5.99

This is how it looked when I got it out of the package.  Very pretty vibrant veggies! 
 Lately I have been on a spinach kick!  I like to saute my spinach in Kerry Gold Butter, garlic, and slivered almonds..I add this to my eggs in the a.m. and also bring a container to work to snack on mid day!
This morning I made some yummy eggs!  They were delish!  I sauted some spinach, bell peppers, onions, and feta cheese.


I added my 2 cage free eggs to the pan.

 Perfect breakfast to take to work!

Fit Life Deals

My favorite "Healthy Fast Food" is Fitlife Foods hands down http://www.eatfitlifefoods.com/ !  Healthy food already prepped!  Just heat and eat!  After church this past Sunday we stopped in to check out the board!  Yes the 50% off board and we got 6 yummy meals + a free insulated lunch bag for $29 which is perfect for me for work since I pack every day! Can't beat that, esp for healthy prepared food!  We got Ab Tight Steak, Greek Meatballs, and the Chicken Gyro Bowl!




Monday Night Eats

Tonight we had spaghetti over zucchini noodles and salad.  The spaghetti sauce I made a week or so ago and when I make it, I always make extra for another future night's dinner.  Super easy and quick when your short on time!  I made home made salad dressing since we were low.  Super easy to make.

1/4 c Balsamic Ving
3/4 c Olive Oil
1 tbsp Honey
1 tbsp Minced Garlic
Salt and Pepper to taste

 The Zucchini noodles I sauted for 5-6 minutes on med high heat.
 And dinner is served!

Sunday Night Eats

Sunday night we tend to grill out and this past Sunday we did grass fed burgers.  We made several packs so we would have left overs this week for lunch plus we had Trent's buddy over for dinner.  We also made some Oriental chopped cabbage salad (bought at Walmart, pre made-just mix it up), and I sliced up a few tomatoes!
